Cheese Tortellini Soup with Chicken or Smoked Turkey

1 C Diced Celery
1 C Diced Carrots
1 C Diced Red Onion
1 Can Fire Roasted Diced Tomatoes
1 Pkg. Cheese Tortellini (Costco Size, they come in 2’s)
1 T Oregano
1 T Garlic Salt with Parsley
1 T Onion Powder
1/2 t Black Pepper
2 T Olive Oil
1 lb Chicken in strips or cubes, or Smoked Turkey
6 C Chicken Stock
   
Sprinkle olive oil in skillet, once warm add carrots & cook for 3-5 min. then add the celery. Cook for 5 min. then add the onion. Cook about 10 min or until the veggies are no longer firm. Sprinkle in oregano, pepper, garlic salt with parsley and onion powder. Add fired roasted tomatoes and let simmer for about 20 minutes. Transfer to another container and add a little more olive oil and chicken. Season chicken according to your taste and cook through. Once cooked add the veggie mixture back to the pan and let cook another 20 min. In a stock pot add chicken stock, veggie & chicken mix and tortellini. Let cook until tortellini is cooked through then turn down and let simmer for 20 min so the flavors have time to meld together.

{I had some extra pasta in the freezer & was sick of eating it with red sauce, so I put that brain of mine to work & this is what came of it. It's really tasty!}
